Brown Cheese

Who knew . . . that brown cheese means the pizza is done?

My friend Megan Montalbano shared with me that her most favorite job was working at a small mom and pop pizza shop in Provo.  I asked if she tossed the pizza dough in the air and she said she did.  Right then and there I knew this sounded like a skill I needed to add to my very short list of cooking abilities. Those abilities being 1) following the instructions on a box mix for cupcakes and 2) tossing pizza dough.

We arranged a pizza party under the guise of visiting teaching because Megan and Katherine are the best visiting teachers a girl could ask for.  She taught us how to toss pizza dough and we even made a pizza using Ranch dressing instead of pizza sauce.  As some of you may know, I once had a strong affection for Ranch so this pizza was definitely something I was interested to try.

Not only do I now know how to toss dough which surprisingly I was really skilled at for a first time tosser but Megan also taught me another little trick which I will share with you now (with her permission of course).  After you make the dough, roll the dough, toss the dough, spread the sauce and place all your favorite toppings most people rush to put the pie in the oven thus one step closer to their mouths/stomachs.

The secret is in order to know that the pizza has baked to perfection sprinkle a little more cheese on top of the toppings and then bake.  When the extra cheese turns a nice golden brown color the pizza should be ready to remove from the oven.  It even looks more gourmet too with the extra cheese toasted on top.  Don't forget to let it cool a bit before cutting and eating.  Enjoy!

Amazing. You are my most promising prot'ege'. Let's say we start our own mom and mom pizza place. We'd have the best tossed pizza and best browned cheese around! No one could stop us!

I love the stories. By the way- for the burgers- try Jackson Hole - not the town, the restaurant. It's on Columbus and 86thish. Let me know what you think.
