magic dumplings

Who knew . . . chicken and dumplings are magical?

I ate orange glazed chicken and cooked green beans and carrots all week long and may not be able to eat it again for some time as I have developed a slight gag reflex due to over consumption of this dish. Then this week I was feeling quite confident in my new cooking skills and wanted to see if it was budding talent or just luck so I invited my friend Megan over for Part II - Parma Couscous with asparagus and tomato. Another success if I do say so myself. And I am starting to see a trend as this has become another dish that I am sick of eating after several days of left overs. All in all Part I and Part II have been a success and it has been nice to have lunch and dinner already to go in the fridge.

That brings us to tonight's dinner, chicken and dumplings. I selected the recipe from the gifted Betty Crocker Basic Cooking cookbook because it's freezing cold outside and it looked like yummy comfort food which I had all ingredients for (except for the spice majajroroeoiemr - not sure how to say it and didn't want to pay $6 just to use 2 teaspoons so I skipped it). I will spare you the details as it's pretty much a cook the chicken, add the ingredients, and simmer type of recipe which you could all do in your sleep. BUT that is where it gets interesting. It's a magical dish. The dumplings cook on top of the soup and end up tasting yummy! I was quite confused and must of read the directions over 10 times. I even asked Kirsten for a second opinion. I just couldn't believe you spoon bits of Bisquick dough on top of this chicken soupy mixture and everything comes out okay. I was sure I would end up with a doughy, slimy, chicken soup mess.

Before moving ahead I checked the level of the peanut butter jar and loaf of bread as my back up plan incase this failed. I then dropped the dough on the liquid and let it cook. I came back and was amazed that the biscuit stuff on top was cooked and weren't balls of mush. After putting the bread and peanut butter back because I was that sure this was going to fail, I served up some on a plate and found that the dough cooked and absorbed a lot of the juices from the bottom of the pan. Success!!

This time next week I probably won't be able to say the word chicken dumpling with out feeling ill because I have 5 take out containers in the fridge waiting for lunches and dinners. What is next? Hmmmm maybe Asian Wonton Salad from Best Bites because I think I need the extra won ton wrappers for the dessert. Or maybe chicken enchiladas compliments of Betty Crocker. One day I will make a dish with another type of protein other than chicken but for now, I am putting that bag of frozen chicken from Costco to good use.
